Instagram foodie Cakeontherun has shared her simple pancake recipe and it requires just flour and milk.
She uses a non-stick frying pan so doesn't use any oil or butter to keep them low in fat, and likes to top them with low fat Greek yoghurt for added protein. If you're a fan of
scones, then you're in luck too as Cakeontherun adds a touch of fruit conserve on top of each pancake to make them look like a healthy version of the traditional British treat.
The recipe below makes 10 mini pancakes, perfect for children, lunch boxes or an after dinner delight. They can easily be made vegan friendly by using soya, oat or coconut milk and
similarly, topping them with a plant based yoghurt instead of Greek.
Plus, if you follow a gluten-free diet, simply switch standard self raising flour for gluten free flour, available in large supermarkets such as Tesco and Sainsbury's located down to
Free From aisle.
This year Shrove Tuesday falls on March 4. For another great pancake recipe, check out these scrumptious banana pancakes which also require just two ingredients.
Pancake recipeMakes 10 mini pancakes
Ingredients
3 heaped tbsp self raising flour 10 tbsp any milkMethod
Mix flour and milk in a bowl to form a smooth batter. Fry tablespoons of the batter in a non-stick pan or use light cooking spray. Cook on both sides for a couple of minutes untilgolden. Top each pancake with low fat Greek yoghurt or soya yoghurt and jam or fruit purée. The Non-stick GreenPan frying pan is great for cooking pancakes. You could throw some berries
into the batter too for a fruity twist (Image: GreenPan)
Non-stick frying pan
The GreenPan features the latest PFAS-free Thermolo ceramic non-stick coating on high quality reinforced aluminium in a range of delicate pastels including mint green, light and sky blue,
blush pink and sunshine yellow. Complemented by elegant stainless steel riveted handles with a hard-wearing, matt gold protective coating, the range is available from greenpan.co.uk as
individual pans (starting from £45 for a 20cm Fry Pan) to sets with various sizes.
Savoury twist
For pancake lovers who haven't got a sweet tooth, chutney and cheese go very well on these two ingredient pancakes. Grate two tablespoons of cheese and add a big pinch of black pepper
into the batter before frying, then top with a good quality chutney.
